Recent market trends related to consumption and in-house production, on the one hand, and changing consumer habits, on the other, are leading to changes in the brewing landscape. This is a major concern at all levels of the industry. This study analyzed the keg beer packaging process as a whole and sought to identify solutions to the various challenges that may arise during these operations-challenges closely related to hygiene, beer quality, and, above all, consumer food safety; particularly with regard to the pasteurization process, cooling, and other activities such as the keg washing and disinfection system. Hazard analysis, assessment, and monitoring are the cornerstones of the HACCP system and ISO 22000. Furthermore, the proposal for a validation approach that enables the evaluation and verification of hazards and control measures through a monitoring system managed by the management and food safety team.
